But 15 years ago, mention being “gluten intolerant” or following a “gluten-free diet” and you were more likely to get a blank stare or even worse, an eye roll.

I avoided gluten way before I avoided alcohol, but my favorite craft beers were still on the “will suffer through the gluten repercussions” list AND after I stopped drinking alcohol it was still on the list, because, well the gluten was still in my NA beers.

Today, there’s good news for everyone, whether you’re like me, feeling better with less or no gluten in your diet, or among the 3 million people with Celiac disease or a gluten-related disorder, or even somewhere in between. There are now a wealth of options and ideas for what to eat and drink.

In the No Proof World, non-alcoholic (NA) breweries actively recognized and addressed the unmet demand for gluten-free options much faster than traditional beer manufacturers. The brewing process then mirrors that of traditional beers, involving mashing, fermenting, and flavoring stages. Once brewed, the beer undergoes processes such as vacuum distillation or reverse osmosis to remove alcohol while preserving the essential flavors and aromas.

Changing Process: The wheat or barley remains the main ingredient in these beers. Brewers instead change up the fermentation process by adding an enzyme that breaks down the gluten down to 20 parts per million (PPM) during the fermentation process. This enzyme has little to no effect on the flavor or body of the beer. Once brewed, the beer undergoes their preferred method of alcohol removal.
